If baked ziti is a bastardization of lasagna then this is what happens when I try to summon lasagna through dark magics and the blood of the innocent.
With that being said this dish is a delicious and hearty meal for all.
You’ll need a pan and a large greased baking dish to get this one done.
Otherwise here’s the ingredients:
- 1 lb. Chicken Breasts (cut into one-inch cubes)
- 1 12oz. box of Pasta such as rotini or shells (cooked)
- 1/2 lb. Oyster Mushrooms (chopped)
- 1 28oz. can of Tomatoes (sliced)
- 1 lb. Mozarella (cut into cubes or 1/2 cubed 1/2 sliced)
- [optional] 1/2 C. Parmesan (grated)
- 1/2 Onion (large, chopped)
- 5 cloves of Garlic (crushed, minced, or chopped)
- 1 t. Tarragon
- 1 t. Oregano
- 3 T. Olive Oil
Pre-heat your oven to 400℉.
Take your pan put it on the stove with and add your olive oil turning up the burner to medium high. Put the mushrooms, garlic, and a dash of salt in the pan when warm and cook (stirring occasionally) for about 5 minutes. Lower your heat to medium then add your chicken, tarragon, oregano, onion, some fresh ground pepper and cook until the chicken is mostly cooked through continuing to stir.
Afterwards add the can of tomatoes (liquid and all) and heat through until gently bubbling. Remove from heat and add your 1/2 of your cubed mozzarella, salt to taste, a little more pepper, and then toss with the noodles.
When it has cooled slightly pour this into your greased baking dish. Then top with your remaining mozzarella cubes or slices and parmesan if your using it.
Bake for about 20-30 minutes or until the cheese is brown or bubbly.
Remove, let sit for 5-10 minutes, and serve.
Easy, delicious, relatively healthy, and moderately light this dish is good for most any group of people.
It’s easy enough to make vegetarian by swapping the chicken for zucchini and eggplant.
