Chipotle Mayo Sauce

This is a short, but easy, recipe that you can use to dip or spread on anything you’d like to add a slightly smokey and spicy flavor to.

You’ll need a food processor or blender and these ingredients:

- 1 C. Mayonaise

- 1/2 C. Sour Cream

- 2 T. Lime Juice

- 2 Chipotle Peppers (from 1 can Chipotle Peppers in Adobo Sauce)

- 1/2 t. Adobo Sauce (from the can the peppers were in)

The most complicated part of this recipe is finding the chipotle peppers in adobo sauce. Depending on where you live the reliability of being able to find them in the ‘ethnic foods’ aisle or ‘hispanic’ aisle can be pretty hit-and-miss.

But once you’ve tapped into the vein of Peppers, just add all your ingredients into your blender and puree until it’s all mixed. You can serve right away but I prefer letting it sit in the fridge for a couple of hours to solidify for just a bit.

Smokey Goodness

And like that you’ve got a delicious smokey-spicy-spread to put on some bacon-avocado burgers or to dip fries and tots into.
